This bean from Papua New Guinea i s Fair Trade and Organic Criollo Cacao.The flavors are light and delicate. Mild is the official chocolate term. There are also fruits galore. There were banana, strawberry, plum, mango other general tropical fruits. In the chocolate itself, no one flavor dominates, and you get a very soft fruitiness. Again, more like a ripe peach or apricot. Of course, there is chocolate which is solid without being too subtle or too bold and is balanced by a slight bitterness, but hardly any astringency to speak of.
Don’t try to make it what it is not, a big beefy chocolatey bean. Expect it to be what it is and can be – a cacao bean with significant Criollo stock, a “fine flavor” cacao bean.

This is THE BEST organic, fair trade 85% dark chocolate. Non-alkalised so full flavoured, much nicer than my second go to Aldi fair trade dark choc, which is very mild and less interesting.
It’s like a good Zumbo dessert when fresh – layers of flavour tones, full and robust although it says mild on the description…..more a “punch in the face” to me, with its rich antioxidant profile. I slip a square into a sliced dried fig to add to the gustatory experience.
Yummo and guilt free good for me and fair trade – which is the most important criteria in chocolate purchasing.
