So I started playing around with some different techniques to see if I could make RAW cacao powder,and I am pleased to say MYTH busted.It can be made but not with conventional methods of pressing the cacao liquor to seperate the mass from the liquid this is just value adding,they end up with two products as opposed to one, cacao butter and cacao powder.A cacao mass that is deprived of its nutritional value and has certainly been heated to above 60deg for over half an hour under high pressure,anything but high pressure with this method would be inefficient and not sustainable on a commercial level ,the mass is then pulverized and then sold to you as RAW cacao powder,its bullshit pure and simple !!!
Okay the way I do it,is different because I wanted to create a cacao powder that is full of nutritional value and to maintain my integrity as a food producer and dont want the end consumer to be swept up in marketing bullshit.So what I do with my cacao powders is a proprietry protected method (hhmmm) basically I make my 100% pure chocolate and maintain an average temperature in the conche of 40 deg with the aid of a cooling system and then once the chocolate liquor is finished conching I then go about propogating the Type VI crystals this allows me to then pulverize your chocolate into a powder.
So thats how its done.
